High Fiber Gluten Free Antioxidant Rich

This Asparagus, Edamame, and Pea Salad is a vibrant and refreshing side dish packed with fiber, antioxidants, and anti-inflammatory ingredients. Topped with my Clean Lemon EVOO Dijon Honey Dressing, it makes for a perfect addition to any meal.

Ingredients:

  • 1 bunch asparagus, chopped

  • 1 cup edamame shelled fresh or frozen & thawed

  • 1 cup peas fresh or frozen & thawed (frozen petite peas are my favorite)

  • 2 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp honey

  • Juice of 1 lemon

  • Salt and pepper to taste

Instructions:

  1. Blanch asparagus in boiling water for 2-3 minutes until tender-crisp. Drain and set aside.

  2. In a bowl, combine edamame, peas, and asparagus.

  3. In a small bowl, whisk together olive oil, Dijon mustard, honey, lemon juice, salt, and pepper.

  4. Drizzle the dressing over the salad and toss to combine. Serve chilled.

Store: In an airtight container in the refrigerator for up to 5 days.
